Aunt Peggy’s Cucumber, Tomato and Onion Salad

Salad

Ingredients

1 lb (about 2), peeled and thinly sliced cucumbers

1 pint halved cherry tomatoes

1/2 very thinly sliced Vidalia onion

2 tablespoons chopped fresh parsley leaves

1 tablespoon apple cider vinegar

1 tablespoon olive oil

salt

freshly ground black pepper

Directions

Toss everything together in a large serving bowl. Season with salt and pepper, to taste.

Let the salad stand for 10 minutes before serving.
